Study Cookery at NZMA

You will build on the knowledge and techniques developed in the first year, and gain the expertise required for progression as a chef in the hospitality industry.

This programme produces graduates who are proficient in advanced cookery skills as well as allied administrative and kitchen management skills. As part of your programme, you are required to apply all the skills you have developed to plan and implement a live dinner service.

All Cookery graduates from NZMA will have the opportunity to pathway with the International Management Institute (IMI) in Luzern, Switzerland, to complete an internationally recognized qualification from an institute that is ranked 12th in the world for hospitality training. Students will also have the opportunity to receive work experience through their excellent network of contacts in the industry, including the Ritz-Carlton, Marriot, Fairmont, Intercontinental, Four Seasons, and Disney – just to name a few.

Course content includes:

  • The application of management skills in the development of products and services
  • Research and evaluation of current innovations
  • Development of practical application and management principles of food and beverage service
  • Understanding and experiencing the principles and concepts of food production management
  • Students major in either Patisserie or Cookery.

In the final semester, students are required to complete a research project based on a full-time 600-hour internship. 

What qualifications will I gain?

  • New Zealand Diploma in Cookery (Advanced) with strands in Patisserie or Cookery

International students will also gain

  • Certificate in Cookery (Level 3) 
  • Certificate in Cookery (Level 4)

This 40-week course (which includes Level 3, 4, 5 and a 600-hour internship) is offered at NZMA’s Sylvia Park Campus.

International Students:

Tuition Fees: NZD$ 19,500

Course Fee: NZD$ 2,500

The New Zealand Government has imposed an international student levy on tuition and course related fees. From 1 January 2019 the levy will be 0.89% of the compulsory tuition fees.

Entry Requirements

  • Domestic students need to be 16 or older, international students need to be 18 or older.
  • You must have completed our Level 3 and 4 Certificates in Cookery.
  • Applicants without formal qualifications must meet the minimum requirements of the NZMA placement asesssment. 
  • If English is your second language you’ll need an IELTS score of at least 5.5 with no band score lower than 5.0*.\
  • Interantional students must have travel and medical insurance and a valid visa.

* Other English Tests / evidence may be approved as advised by NZQA
