Study Hospitality at NZMA

This two-year course covers the advanced cookery knowledge and skills required for progression as a chef in the hospitality industry. In addition to kitchen management skills, students graduate with advanced skills in either applied cookery or patisserie.

What will I learn?

  • Food safety, knife-handling skills, safe working methods and preparation of basic stocks, sauces and soups
  • Preparation of basic hot and cold dessert items, basic pastry dishes and dough products
  • Food costing, preparation of basic fish and meat dishes
  • Preparation of rice and farinaceous dishes, and egg dishes
  • Preparation of health-based dishes, complex bread and dough products and complex soups
  • Preparation of complex pasta dishes, poultry dishes and seafood dishes
  • Preparation of complex pastry products, hot and cold desserts and cakes, sponges and biscuits
  • Preparation of complex meat dishes and cold larder products

International Students:

Year 1:

Tuition Fees: NZD$ 20,700

Course Fee: NZD$ 3,200

Year 2:

Tuition Fees: NZD$ 13,800

Course Fee: NZD$ 2,400

The New Zealand Government has imposed an international student levy on tuition and course related fees. From 1 January 2019 the levy will be 0.89% of the compulsory tuition fees.

Entry Requirements

  • Students must be 17 years old or older
  • Applicants must have an appropriate level of English proficiency for the level at which they intend to study
  • International students must have a minimum IELTS academic score of 5.5 with no bad score lower than 5.0 
  • You must have travel and medical insurance and a valid visa
